ACORN GRIDDLE BREAD

1 tblspn butter
3 tblspn wild leeks or chives, chopped
1 cup cornmeal
1 cup acorn flour
1/2 tsp baking soda
1 tsp salt
1 tsp baking powder
1 tblspn flour
1 cup buttermilk
1 egg well-beaten

1. Melt butter in small skillet over low heat and
cook leeks or chives until well wilted but not
browned.
2. Sift together cornmeal, acorn flour, soda, salt,
baking powder, and flour.
3.Add buttermilk and leeks or chives to dry
ingredients and stir well.
4. Stir in egg.
5. Drop by tablespoons onto hot greased griddle
and cook until bubbles along sides begin to break;
flip and cook until other side is golden brown.
